happy friday, party people! i can't believe it's that time again. time simply slips right through my fingers lately. on thursday i lived a life of leftovers, and i am feeling pretty good about having had everything prepped and easy to access. i don't know why, but i sort of switched the order of breakfast … Continue reading cashews are magic / burrito friday

slightly changed

September 15, 2020September 14, 2020 ~ cookingwithleeks ~ Leave a comment

i wrote yesterday about not feeling like cooking, but now i'm feeling back in the mood for it... slightly. it may have something to do with the fact that it feels like that 'unhealthy' air quality will be in the past within the next few days. and yesterday, i even set some cooking plans into … Continue reading slightly changed

happy monday, everyone! i am over here hoping and even praying for the wildfires to be contained and a bit of normalcy to return to life. being stuck inside with the windows shut all weekend was not an ideal moment in time. we didn't make it to the beach or dog park once! i feel … Continue reading a simple n fulfilling dinner

my two favorite recipes for preparing tempeh

September 13, 2020September 12, 2020 ~ cookingwithleeks ~ Leave a comment

if you've never had tempeh before, go to the vegetarian section of your grocery store (usually near the produce, refrigerated) and grab you some tempeh! it's so good to have around as a quick snack or to add on top of any grains and vegetables for a delicious treat. it's high in protein, has a … Continue reading my two favorite recipes for preparing tempeh

i asked on my instagram what my friends would like to see blog posts about. i received many responses, most of them sarcasm lol. but my good friend jake, who i met in austin and has an awesome cocktails IG called little_cantina, recommended that i post about sweet and healthy treats, which is something i … Continue reading sweet and healthy treats

a few good sauces

September 11, 2020September 10, 2020 ~ cookingwithleeks ~ 1 Comment

i've been working from home since 2017, and in that time i've learned to prepare many quick lunches for myself, usually consisting of odds and ends in the fridge or that i've prepped beforehand for this exact occasion. my favorite lunch is one where i simply pull the prepared ingredients out of the fridge and … Continue reading a few good sauces

cooking: day two of weekly plan

September 9, 2020September 8, 2020 ~ cookingwithleeks ~ Leave a comment

went to crissy field beach in san francisco after work yesterday with char n gary. hardly any traffic across the bay bridge from oakland! as we pulled into the presidio, a blanket of fog enveloped the entire area. the temperature dropped to around 62 degrees F, and the wind was in full force. it was … Continue reading cooking: day two of weekly plan

when in doubt... toasted sourdough 🥖 + avocado 🥑 + fried egg 🍳!!!! (plus whatever else you got! sautéed or roasted veggies and hot sauce would have been ideal in my book!)
just a little grilling out veggie style! field roast veggie sausages + buns + baked beans (with onions - never forget!) + sautéed chard + grilled asparagus ❤️🌿
mmmmm rice bowl time 🍚 i’m in love! i’m through all my very freshest veggies so wanted to cook up some oldies that have been hanging out a while — i roasted a honey nut squash and red bell peppers, sautéed up some leeks and shallots, fried an egg, and steamed some sweet rice! made a sauce with kewpie mayo, sriracha, rice vinegar, and soy sauce 🌿 now i’m curious ~ what are your favorite veggies that last a while?! 😍
overnight oats with blueberries, topped with toasted pecans and cinnamon! 🌿
gnocchi vibes today ☁️🥔 used leftover caramelized shallot pasta sauce with some prepared gnocchi which is my new power move 🌿
sweet rice and romaine with sautéed veggies kale and leeks and a fried egg with a sauce of kewpie mayo, coconut aminos, rice vinegar, and sriracha! 🍳🥬 🍚
