fried egg on rice with kewpie mayo sauce

this is probably the easiest and tastiest recipe EVER, meaning – the best recipe ever? a low risk, high reward kind of thing. you just have to cook rice, fry an egg, and make a DELICIOUS kewpie mayo sauce. is anyone else obsessed with kewpie mayo? i discovered that my corner store in austin has it, so i’ll always be stocked. you can also order it on amazon or get it at most grocery stores these days. i love. and i also digress, but this is the perfect recipe to warm you up on a cool morning. it has spice, it has protein, it has fat. and to me, that is what i want when i’m getting started with my day. so without further ado, here’s my quick recipe. btw, will only provide details for the sauce because i don’t want to write out how to cook rice and fry an egg – you do you! you know how you like it.

ingredients:

for the sauce:

4-5 tsp kewpie mayo
1 tsp tamari or soy sauce
1 tsp sriracha (less or more depending on your spice preference)
1 tsp rice vinegar
pinch of salt

for serving:

rice (i used jasmine)
scallions, sliced on an angle
toasted black sesame seeds
fried egg (or eggs)

directions:

  1. make sauce: combine sauce ingredients and stir til it’s come together – may be kind of clumpy at first but just keep stirring. taste and adjust seasonings if needed.
  2. assemble: in a serving bowl, add rice. top with fried egg(s). drizzle sauce (you may or may not choose to use all of the sauce – i, however, did lol). sprinkle with sesame seeds and scallions.
  3. serve!!! ❤
