Roasted Sweet Potato Bowl with Tahini-Chili Crisp Sauce Recipe

Ingredients

For the Bowl:

  • 1 cup uncooked rice (brown, white, or jasmine)
  • 2 medium sweet potatoes, peeled and cube(ish) into 1 inch pieces
  • 1 red onion, thinly sliced
  • 3 cups fresh spinach
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

For the Tahini Chili Crisp Sauce:

  • 1/4 cup tahini
  • 2–3 tablespoons chili crisp
  • 1 tablespoon soy sauce (or tamari)
  • 1 tablespoon rice vinegar (or lemon juice)
  • 1–2 teaspoons maple syrup
  • 2–4 tablespoons water (to thin)

Instructions

1. Cook the Rice:
Cook the rice according to package instructions. Fluff with a fork and set aside.

2. Roast the Sweet Potatoes:
– Preheat your oven to 425°F (220°C)
– Toss the cubed sweet potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper
– Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and tender.

3. Sauté the Red Onion and Spinach:
– Heat 1/2 tablespoon olive oil in a skillet over medium heat.
– Add the red onion and sauté for 5 minutes until softened.
– Add the spinach and cook for another 2 minutes until wilted. Remove from the skillet and set aside.

4. Crisp the Chickpeas:
– In the same skillet, heat the remaining 1/2 tablespoon olive oil.
– Add the chickpeas and cook over medium-high heat for 5–7 minutes, stirring occasionally, until golden and slightly crispy. Season with salt and pepper.

5. Make the Tahini Chili Crisp Sauce:
– Whisk together tahini, chili crisp, soy sauce, rice vinegar, and maple syrup in a bowl
– Add water 1 tablespoon at a time until the sauce is smooth and pourable.

6. Assemble the Bowl:
– Divide the rice among bowls.
– Top with roasted sweet potatoes, sautéed onion and spinach, and crispy chickpeas.
– Drizzle generously with the tahini chili crisp sauce
– Add the optional add-ons!

Optional Add-Ons:
– Sprinkle with sesame seedsor chopped cilantro for extra flavor.
– Add a fried egg or avocado slices for more richness.
