food plans: 8/23 – 8/29

for the first time in a while, i’ve created a basic menu plan for the next week that i wanted to share in case any of it proves to be of interest to others, and also for: my own documentation purposes.

i have been craving salads, so today i stocked up on produce. for lunches, i’m planning to make single-serve portions of these salads!:

i also have peaches, leeks, shallots, and mushrooms to add into the above!

for breakfasts, i’m planning on overnight oats and chia seed pudding. peep my overnight oats recipe here. planning to riff on the chia seed pudding recipe from Love and Lemons here. i have peanut butter, seeds, figs, and probably a few other toppings that will be great! but mostly… peanut butter.

for dinner, you already know – hello fresh is happening! (see last post lol)

i can’t believe the weekend is already over! on saturday i got a tattoo – my FIRST tattoo! and i’m obsessed with it. everyone’s responses for the entirety of the tattoo process have been hilarious – from first deciding on the tattoo and telling people i was going to be getting one, up until now – when everyone asks, “what does it mean?” ! which is a totally valid question, but i’ve only had the tattoo for a day and i’m already laughing because i had heard tattooed people talk about that before. i think of mine as a surrealist art piece by an artist i really admire! so it doesn’t really mean anything, other than it’s aesthetically pleasing and makes me think happy things. and when i first told people i was going to get this, some responded by saying NOTHING. so then to preface showing the design to people, i was like: i will show you the design but you can’t say that you don’t like it, because i’m getting it regardless. which turned out to work! thanks for all the support – real and not real. ❤

i was so happy my first tattoo was handpoked because it was such a gentle experience. honestly scared of machine tattoos because they seem so much more painful!! is that true? unsure! haven’t had one! but handpoked was easy and fun and i think the result is so adorable.

i hope everyone has a good week ahead! i have a crazy certification exam to take thursday for work that i will be studying nonstop for this coming week, which is one reason why i wanted to plan out my meals and eat lots of veggies for brain power!! please send me any positive studying/test-taking vibes, will accept anything honestly! exercise this week will most likely be 30-45 minute peloton rides with Jess King! she’s my fav instructor, and it’s also my new morning addiction – dripping sweat from a peloton class right after waking up and having coffee! you know it’s going to be a good day when you cleanse via exercise right after you wake up – clearing out your pores and your spirit! hehe. also planning to go on walks – the best exercise of all!

  1. I’m reading a book by Michael Ruhlman – Pate, Confit, Rillette. It’s a great study of techniques I haven’t tried. I made a Chicken and Mushroom Terrine. Super good with mustard and pickles. I served it with a rustic bread and some hot and sweet pickles. And fresh figs.
    I just read a recipe for Savory Duck Pies. I’d like to try it.
